Banana Caramel Fritters with Caramel Sauce

Caramel and bananas are a match made in heaven. Add in a crisp coating and more caramel sauce and you have a swoon-worthy dessert. Serve it with premium vanilla ice cream for wow factor.


  • 3 bananas, ripe
  • 2 tablespoons Bonne Maman Caramel Sauce
  • 1 cup plain flour, sifted
  • 1/2 cup sparkling water
  • 2 teaspoons baking powder
  • 1/2 cup rice flour, sifted
  • 3 cups vegetable oil
  • 1 tablespoon icing sugar for dusting


  1. Mash the bananas in a bowl with the back of a fork until the mixture is smooth
  2. Add the caramel sauce and mix through
  3. Fold in half of the flours and mix until smooth. Then add the other half of the flour and fold through.
  4. Add sparkling water and baking powder. Mix until the batter is smooth. Set aside for 10 minutes.
  5. Place oil in a saucepan and heat on high for 5 minutes until a small amount of mixture dropped into the oil bubbles.
  6. Add tablespoon measures of the mixture into the hot oil in batches.
  7. Cook for 4 minutes or until golden brown.
  8. Remove with a slotted spoon and put onto a paper towel-lined plate to drain excess oil.
  9. Dust with icing sugar and serve with the remaining caramel sauce.
