- ¼ cup (50g) white sugar
- ½ cup (120ml) vegetable oil or melted butter
- 2 large eggs
- ½ cup (120ml) milk
- 1 tsp vanilla extract
- 1 ½ cups (200g) diced apple (about 2 medium apples, peeled and cored)
- ¼ cup (30g) chopped walnuts or pecans (optional)
- 1 tbsp raw sugar for topping (optional)
Instructions
- Preheat oven to 180°C (350°F). Line a 12-hole muffin tin with paper cases or grease the tray.

How to Make These Easy Apple Muffins Vegetarian
Good news! This apple muffin recipe is already vegetarian-friendly. However, if you want to make it egg-free or adjust for dietary preferences, here are some easy swaps:
Egg Replacements:
- Flaxseed Egg – Mix 1 tbsp ground flaxseed with 3 tbsp water per egg. Let it sit for 5 minutes until gel-like.
- Mashed Banana – Use ¼ cup mashed banana per egg for a naturally sweet alternative.
- Unsweetened Applesauce – Replace each egg with ¼ cup applesauce for extra moisture.
Dairy-Free Option:
- Swap regular milk for almond, oat, or soy milk to make the recipe completely plant-based.
These simple adjustments ensure your muffins stay just as moist, fluffy, and delicious while being completely vegetarian (and even vegan if you skip the eggs and dairy)!

Make-Ahead and Freezing Tips
These apple muffins are perfect for meal prepping and can be made ahead to enjoy throughout the week. Here’s how to store and freeze them for maximum freshness:
Storing:
- Keep the muffins in an airtight container at room temperature for up to 3 days.
- For longer storage, refrigerate them for up to a week, but warm them slightly before eating to bring back their soft texture.
Freezing:
- Allow the muffins to cool completely before freezing.
- Place them in a single layer on a baking sheet and freeze for about 1 hour until firm. Then, transfer them to a freezer-safe bag or container.
- They can be stored in the freezer for up to 3 months.
Thawing and Reheating:
- Let frozen muffins thaw at room temperature for about 30 minutes, or microwave them for 20–30 seconds to enjoy warm.
- For a freshly baked taste, pop them in a preheated oven at 150°C (300°F) for 5–10 minutes.
Now you can always have a batch of delicious apple muffins ready to enjoy whenever cravings strike!
