Salt Sommelier Experience Harvesting Flavour from the Southern Ocean
I’d never heard of a salt sommelier before. A wine sommelier, yes, but salt? How did that work? That sense of curiosity quickly turned to delight, and there was something unexpectedly magical about the Tasman Salt Sommelier experience, making it a highlight of my Tasmanian East Coast road trip and one of my favourite Australian food experiences. The Tasman Salt story began when Tasmanian-born Chris returned from a stay in the UK with Scottish-born Alice, and they couldn’t buy local sea salt. So, they decided to make their own drawn from the cold waters of the Southern Ocean and naturally solar-dried. Their salt is hand-harvested into delicate flakes with clean, mineral notes. It’s a pantry staple in my kitchen, and I often use the delicately flavoured varieties to enhance my cooking. Standing beside the ocean, it’s impressive to view the clean energy harvesting system they have created. You can tour the Saltworks or enjoy a unique tasting experience that will make you see salt in an entirely different way. There’s a bit of history too. This is food travel Australia at its most elemental, where sea, sun and wind do all the heavy lifting. For me, the Salt Sommelier experience at Tasman Sea Salt ranks among the best food experiences in Australia because it shows how a single ingredient can convey a sense of place so clearly.

From Bean to Bar – Cocoa Growing at The Australian Chocolate Farm in Queensland
Nestled in the lush Shannonvale Valley just 15 minutes from Port Douglas, Darryl and Jenny Kirk’s The Australian Chocolate Farm invites travellers into the world of cocoa growing in tropical North Queensland. Cocoa production is a niche industry in Australia, limited to the tropical climate of Far North Queensland. A visit here makes a great add-on to a stay at Port Douglas, Palm Cove or Cairns. You can take an interactive bean-to-bar farm tour that explains how cocoa trees thrive in this climate and how beans are transformed into award-winning chocolate, ending with delicious, generous tastings. I was fascinated to see the cocoa pods growing directly from the tree trunks and then tasting the pulp, which, though palatable, tastes nothing like chocolate. The Australian Chocolate Farm has an on-site café that serves light lunches, barista coffee, hot chocolate and freshly baked treats, all overlooking their scenic cocoa plantation.

Truffle Hunting and Paddock-to-plate Indulgence
Though renowned for its outstanding wine, Western Australia’s Margaret River also offers many delicious, immersive Australian food experiences. This truffle farm exploration stood out to me because of the warm, generous hosts and the cute truffle hunting dogs. The Dig Deep & Eat Experience at Margaret River Truffle Farm starts with the truffle dogs leading you to the young oak and hazelnut trees, noses to the ground, uncovering black truffles hidden just below the surface. I had my first taste of a macaron with truffle topping and a delicious truffle cheese toastie at Margaret River Truffle Farm. I came away with an aromatic block of truffle chocolate, which was impossible to hide from my husband because the truffle aroma was so strong. Luckily, he is not very fond of truffles! I love oysters and take every opportunity to try them as you’ll see from this East Coast Tasmania oyster tour. This highly educational tour expanded my knowledge with a look at the Candy Abalone processing plant and a chance to try delicious local Gillespies Ginger Beer. The tour takes you to the edge of the bay where the oysters are grown in cold, nutrient-rich waters that produce exceptional clarity and sweetness. You can finish the tour with a half dozen oysters or head upstairs to the restaurant, where eating oysters while overlooking the leases where they’re grown brings food travel in Australia full circle. This is Australian food and travel rooted in transparency, where you see exactly how the pristine environment shapes flavour. What makes Barilla Bay Oyster Farm one of the best food experiences in Australia is not only the combination of education and pleasure in equal measure, but also the extensive farm shop, which is full of top Tasmanian produce. So close to Hobart airport, it’s a perfect place to stock up when you arrive and also before you depart for take home treasures.

The Bundaberg Rum Distillery is woven into Queensland’s identity, and their Blend Your Own Rum Experience stands tall among my most memorable Australian food experiences. I’ve long been a fan of Bundaberg Rum and often reach for it in the kitchen, including in recipes like my much-loved rum balls. A visit here reveals the role of sugarcane, time and climate in shaping one of Australia’s most recognisable spirits. You’ll create your own personalised rum blend and leave with two bottles to take home. If you want to follow my recipe, just ask for the Eat, Drink, and Be Kerry blend. It should be on file. The Bundaberg Rum experience stands out as a classic example of unique Australian food experiences, combining large-scale spirit production with a rich farming heritage that has shaped Bundaberg rum since 1889.

The huge range of produce reflects Far North Queensland’s climate, from tropical fruits to fragrant herbs and fresh seafood. There will be plants and fruits that you’ve never seen before and the chance to try unique local foods and direct connection with growers.
