Instructions

    Make the pastry

    1. Place the butter and caster sugar in a food processor and pulse until combined.
    2. Add the eggs and process until smooth.
    3. Add the flour, baking powder and lemon zest. Pulse until the mixture comes together as a dough.
    4. Shape into a disc, wrap in plastic wrap and refrigerate for 1 hour.
    5. Roll the pastry out on a lightly floured surface until large enough to line a 23cm loose-bottom fluted tart tin.
    6. Press the pastry into the tin, trim the edges and refrigerate for 30 minutes.

    Blind bake the pastry

    1. Preheat the oven to 180°C.

    3. Bake for 15 minutes.
