A Sustainable Fine Dining Brisbane Experience

At Aloria, I discovered a fresh approach that embraces sustainable fine dining in a way that Brisbane food enthusiasts are sure to appreciate. Showcasing Queensland’s finest dry-aged beef and seafood, the menu highlights the best of local, seasonal produce through time-honoured woodfire and grill techniques.

As soon as you walk onto the Skydeck, there’s a delightful smoky aroma that guides your taste buds towards the restaurant.

My dining experience was drawn from the banquet menu, which started with the Aloria Signature Caviar and Martini experience.

Appetisers included Aloria’s signature Smoked Carrot Tartare which epitomises sustainability by using every part of the carrot, from the smoked body to the greens and skins, crafting a zero-waste masterpiece. The kingfish crudo with pickled rhubarb and buttermilk pink peppercorn dressing and fried break with salas verdre and bresola that came too were almost impossible to resist.

The star of the entrees was one of my favourite dishes that I often find is so amped up with raw onion that the delicate flavours of the meat are lost.  Aloria’s beef tartar with anchovy topped with a runny egg yolk is one of the best I’ve enjoyed.

For mains, there were ruby red slices of luscious Stockyard dry-aged bistecca and roast coral trout with almond cream and sauce Jacqueline.

Innovative Chef

Chef Shayne Mansfield’s innovative approach is what makes Aloria a standout for sustainable fine dining Brisbane diners. Born and raised in Brisbane, Mansfield trained under Australian culinary icon Philip Johnson at e’cco Bistro, igniting his passion for fine dining. His career took him to London, where he honed his skills at prestigious venues like Scott’s and Pollen Street Social and contributed to the launch of City Social, which earned a Michelin Star within four months.

Returning to Australia in 2015, he moved to The Long Apron at Spicers Clovelly in Montville with a focus on sustainability and whole animal butchery. In 2019, he launched The Flotilla in the Hunter Valley, earning one hat for two consecutive years and a place in Australia’s top 100 restaurants. Most recently, as Executive Chef at QT Newcastle, Mansfield oversaw five venues before returning home to Brisbane to lead The Star Brisbane’s Sky Deck trio.

At Aloria, Manfield’s dedication to minimal waste and uncompromised quality promised that every dish showcases culinary artistry and environmental responsibility.

Plan Your Visit to Aloria at Queen’s Wharf

Aloria offers a Brisbane rooftop dining experience like no other, serving lunch and dinner from Wednesday to Sunday, 12 pm until late. Bookings are essential for this signature venue.

TIP: When Brisbane’s subtropical weather turns to thunder and lightning, you may have to move from the outer deck dining area into more protected parts of the restaurant.

Cicada Blu welcomes walk-in guests for casual drinks and stunning views, operating from 3 pm until late on Wednesdays and Thursdays and from noon until late on Fridays through Sundays.

Babblers is open daily from 7 am until late for an all-day option, making it a perfect spot for relaxed dining.  I love Babblers for an early morning breakfast overlooking the city in its fresh day glory. You can have a K’gari spanner crab omelette with an amazing city view. It’s licensed, too, so if you feel like champagne, why not? We had coffee, croissants and Aperol spritz to kick off the long weekend. It’s the new must-do for Brisbane visitors.

The Sky Deck Observation Deck, offering breathtaking views and access to Sky Deck Aloria Queen’s Wharf, is open to the public every day from 6:30 am until late. Make sure you have a good stroll around the Sky Deck and don’t miss the glass section near the Neville Bonner bridge.  You’ll feel like you are standing on air!
