Ingredients

  • For Cupcakes
  • 250g unsalted butter, softened
  • 2 ½ cups (550g) caster sugar
  • 5 large eggs
  • 1 tbsp vanilla extract
  • 2 tbsp green food colouring (or 2 tsp matcha powder/spinach juice for a natural alternative)
  • 2 tbsp unsweetened cocoa powder
  • 3 cups (375g) plain flour, sifted
  • 1 cup (250ml) buttermilk, at room temperature
  • ½ tsp salt
  • 1 tsp bicarbonate of soda
  • 1 tbsp white vinegar
  • For the White Chocolate Cream Cheese Frosting:
  • 400g cream cheese, softened
  • 300g white chocolate, melted and cooled
  • 200g unsalted butter, softened
  • 1 cup (120g) icing sugar, sifted (for extra sweetness and structure)
  • 1 tsp vanilla extract
  • Zest of 1 lime (optional, but adds brightness)

Instructions

  1. Preheat oven to 165°C (fan-forced 150°C). Line a 12-hole cupcake tray with cases.
  2. In a large mixing bowl, cream butter and sugar until light and fluffy (about 3 minutes).
  3. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. In a small bowl, combine food colouring with cocoa powder to create a smooth paste. Stir into the wet ingredients.
  5. In another bowl, whisk together flour and salt.
  6. Alternately add flour mixture and buttermilk to the wet ingredients, starting and ending with flour.
  7. In a small cup, mix bicarb soda and vinegar (it will bubble!). Gently fold this into the batter—do not overmix.
  8. Divide batter evenly between cupcake cases, filling each about ⅔ full.
  9. Bake for 18-20 minutes or until a skewer inserted comes out clean. Allow to cool completely before frosting.

To Make the Frosting:

  1. Melt the white chocolate in a double boiler or microwave in short bursts. Let cool slightly.
  2. Beat cream cheese until smooth and fluffy.
