Make Christmas Eggnog for a new family favourite
Start your celebrations with a classic Christmas Eggnog and follow it with more delectable rum-based drinks. You’ll impress your guests at Christmas drinks or dinner with these five tasty, rum-based bevvys showcasing the flavours of gingerbread and fresh pomegranate juice. These are classic cocktails with a twist that are sure to get the whole family into the holiday spirit.
I’ve made mine using Diplomático Reserva Exclusiva. Diplomático’s distillery lies at the foot of the Andes Mountains in Venezuela, where the purest of waters run to make the very best of rums. Its location was also carefully selected for its proximity to the area’s main sugar processing plants.
Christmas Eggnog
Eggnog is a milk punch that is often served at Thanksgiving or Christmas. It is thought to have developed from an early British medieval drink with the unattractive name of posset. It’s been a Christmas tradition even before Santa and Christmas trees!
Rich and creamy, what’s not to like about this rum-infused treat? Here’s how to make it.
Ingredients
- 45ml Diplomatico Reserva Exclusiva
- 30ml Whole milk
- 30ml Fresh Cream
- 1 Egg yolk
- 10ml Vanilla syrup*
Glass: Rocks
Garnish: Nutmeg / Star anise
Instructions
Pour rum, milk, cream, egg yolk and vanilla syrup into a shaker and shake until combined
Pour drink into glass and garnish with nutmeg/star anise.
*Vanilla syrup – bring 2 cups of water and 2 cups of sugar to a boil in a medium saucepan. Cook until the mixture slightly thickens, about three minutes. Remove from the heat and stir in 2 tablespoons of vanilla extract. Store in an airtight container and refrigerate.
Gingerbread Old Fashioned
When you just can’t get enough gingerbread, try this Gingerbread Old Fashioned. It’s perfect to sip while you are eating your Gingerbread House!
Ingredients
- 50ml Diplomatico Reserva Exclusiva
- 5ml Gingerbread syrup*
- 2 dashes of Aromatic bitters
Glass: Rocks
Garnish: Orange peel / Gingerbread
Instructions
Pour rum, gingerbread syrup and aromatic bitters into a glass. Garnish with orange peel or gingerbread
*Gingerbread Syrup – Bring 200ml water, 200gms golden caster sugar, 1 tablespoon ground ginger, and 2 cinnamon sticks to a gentle boil for five minutes until the sugar is dissolved. Store refrigerated in a bottle for up to a year.
Holidays
This Christmas rum cocktail tastes like a holiday in a glass!
Ingredients
- 45ml Diplomatico Mantuano
- 30ml Fresh Pomegranate juice
- 15ml Dry Curacao
- 10ml Fresh lime juice
- 1 dash aromatic bitters
Glass: Coupe
Garnish: Rosemary
Instructions
Pour rum, pomegranate juice, dry curacao, lime juice and aromatic bitters into the glass and garnish with rosemary.

Ingredients
- 30ml Diplomatico Mantuano
- 30ml Coffee Liquor
- 30ml Cold brew coffee
- Orange cream float
Glass: Nick & Nora
Garnish: Chocolate powder
Instructions
Pour rum, coffee liquor and cold brew coffee into a glass. Add orange cream float and garnish with chocolate powder.
Sunday Brunch
Here’s an easy rum cocktail that really should be enjoyed all through the year!
Ingredients
- 30ml Diplomatico Mantuano
- 10ml Honey syrup
- 5ml All spice dram*
- 45ml Fresh pineapple juice
- 10ml Fresh lime juice
- 40ml Dry Prosecco
Glass: Coupe or Champagne flute
Garnish: Mint or pineapple leaf
Instructions
Pour rum, honey, all spice dram, pineapple juice, lime juice and prosecco into a shaker and shake until combined. Pour into glass and garnish with mint or pineapple leaf.
*To make Allspice dram – toast ½ cup of Allspice Berries in a heavy skillet for a couple of minutes, then crush roughly. Add 2 ½ cups Navy Strength Rum (overproof rum) and steep for ten days. Strain and add 200 g granulated Sugar in a small saucepan and occasionally stir until the sugar is dissolved. Cool and store in a glass bottle or jar.
