Q&A with Kay Tommerup: “From Our Paddock to Your Pantry”
Kerry Heaney: Kay, you’ve become a familiar face at these markets. What keeps you coming back to Brisbane with your produce?
Kay Tommerup: Honestly? It’s the people. Some of them have stayed on our farm before, and others just love what we do. They can’t always get to the Scenic Rim, so this market brings a bit of our farm to the city. We see familiar faces lining up first thing, eager to stock up. It’s like a little reunion every time.
Kerry: This market, you’re bringing something new and a little bit decadent…
Kay: Yes! Our son Harry has been working hard on growing heirloom popcorn and a beautiful glass gem corn—it’s like a kaleidoscope, absolutely stunning. He’s totally committed to regenerative and organic farming, which we’re so proud of. We’ve taken his popcorn and turned it into something special: Butter Popcorn Jersey Girl Ice Cream.
Kerry: Wait, you put actual popcorn and butter into the ice cream?
Kay: We do! It has cream, almost a kilo of our cultured Jersey butter, and Harry’s own popcorn. The red gum smoked salt gives it this subtle savoury edge that cuts through the richness. It’s outrageous. Thank goodness it only comes in small tubs—although some people definitely take two.
Kerry: You’ve done seasonal flavours before, haven’t you?
Kay: Always! That’s part of the fun. At Christmas, we had Dave’s mum’s Christmas pudding folded through. Before that, there was a port chocolate ice cream. We like to match the flavours to the season and the ingredients we have on hand. It keeps things interesting for our regulars, too.
Kerry: And this ice cream is just one of the reasons to get to the market early, right?
Kay: Absolutely. We bring limited quantities because we’re a small farm, not a mass producer. Once it’s gone, it’s gone. That’s the nature of seasonal, small-batch food. It’s what makes it special.
Kerry: What are your top tips for anyone heading to the market for the first time?
Kay:Come early. Seriously—if you want the good stuff, be there when the gates open. Bring an esky. You’ll find produce, meats, cheeses, and more that really need to stay cool.Talk to us. Ask questions, especially if you’re unsure how to use something. We love helping people get the most out of our products.
Kerry: You mentioned using Wild Foods’ Warrigal Greens Pesto after the markets—what’s your go-to recipe?
Kay: Oh yes, that’s our ritual. After a long market day, I cook some chicken breast, slice it up, and toss it through pasta with a big spoonful of Warrigal Greens pesto and our own Jersey crème fraîche. Simple, delicious, done.

From Paddock to Popcorn: The Tommerup Legacy
At Tommerup’s Dairy Farm, innovation doesn’t mean forgetting the past—it means embracing it. This sixth-generation Scenic Rim farm blends old-world techniques with regenerative agriculture in a way that’s both deeply nostalgic and refreshingly modern.
It all began in 1929, when Dave Tommerup’s grandfather, Harold, first used a corn planter pulled by draught horses to sow corn in the paddocks. By the 1950s, Harold had modified the planter to work behind a tractor, and for decades, corn was planted and harvested by hand. A 1933 farm diary entry proudly notes the family pulled 186 rows—around 15 acres—by hand.
Fast forward to now, and Harold’s great-grandson Harry Tommerup is planting the same crop—but with a twist. Using the original 1929 planter, hitched to a David Brown tractor once owned by Harold himself, Harry planted a quarter-acre experimental crop of heirloom popcorn and glass gem corn, completely organically, as part of the farm’s rotational grazing program.
And yes, he harvested all 700 cobs by hand, just like his ancestors.
The results? A brilliant new chapter in the Tommerup story. The popcorn has found fame as a base for the farm’s show-stopping Butter Popcorn Jersey Girl Ice Cream, while the glass gem corn, with its rainbow-coloured kernels, has been hand-shelled and milled into rustic cornmeal at Salisbury Mill. You’ll spot its unique coloured flecks through the meal—a visual reminder of its heritage.
Each pack of cornmeal includes a recipe for cornbread, perfect with jam, butter, or alongside a steaming bowl of soup.
And it doesn’t stop there. In keeping with the Tommerup family’s full-circle farming philosophy, the leftover cobs have been turned into natural firelighters, delicately scented with lemon myrtle and kaffir lime leaves from Harry’s Paddock. It’s a nod to Harold’s own tradition of soaking cobs in kerosene to light the wood stove—a stove that still warms the family home to this day.
